I did not do the cooking for this one, my boyfriend did. About a week ago, I asked him if he could cook because I was exhausted by it. Not gonna lie. This will happen to you. Have contingency plans in place.

And despite ground turkey being ridiculously expensive per pound ($5.99, that’s crazy!), you can really stretch it when you add all the other veggies and starches and flavors. We were able to get two meals each out of this one. See the cost breakdown here:
What to buy:
- ground turkey – 1 pound
- sweet potatoes – about 2
- red potatoes – about 3
- red pepper – just 1
- cherry tomatoes
- garlic
- balsamic vinegar
- coconut oil
What to cut:
- sweet potatoes – dice
- red potatoes – dice
- red pepper – chunks
- garlic – mince
Spices!
- Curry
- Paprika
- Oregano
- Garlic powder
What to cook with:
- a big old wok
How to make it:
- Cut all the stuff.
- Heat the pan and sautee the garlic in the coconut oil.
- Put in the potatoes in and cover. Let the potatoes soften. Add water if you need to.
- Throw in the turkey. Splash with balsamic vinegar to taste and add spices. Cook it until it’s almost cooked.
- Throw in the red pepper and tomatoes and let them cook with the turkey for a little bit.
- Eat it! It’s super good with hot sauce!
