Cucumber & Turkey Sandwiches – $2.64 per serving

So I’m officially on Day 4 now, but let me tell you, Day 3 of Whole30 was quite eventful. I made crockpot turkey chili (which turned out awesome and I’ll be posting recipe and cost breakdown tomorrow), but in the midst of being super excited about using my crockpot, I forgot that a 6 hour cook time meant I’d need to have lunch for the day.

So I rooted around in my fridge and came up with this:


They are literally (in the literal sense of the word) sandwiches made out of cucumbers! Turns out, slicing veggies lengthwise makes for interesting and delicious bread-like situations. It’s the best way to eat half a cucumber in one sitting and it was SO easy!

Also, surprisingly not as messy to eat as you think it would be, especially if you cut them in half:

Unfortunately, these sandwiches are not very budget friendly. I’ve never thought about it, but sliced deli turkey, or should I say Paleo-friendly sliced turkey, is not cheap. I probably won’t be buying deli turkey again for this challenge with less expensive meat options available. Not that it stopped me from making this again a few hours later for second lunch:

(and yes, that means I ate an entire cucumber in one day, and yes, I googled whether or not it was safe to eat an entire cucumber in one day)

Stuff to buy:

  • Cucumber
  • Deli turkey (Fresh Direct has deli turkey with only 3 ingredients – turkey, salt, and water)
  • Tomato
  • Avocado
  • Mustard
  • Spinach & balsamic vinegar (optional)

Stuff to cut:

  • Cucumber
  • Tomato
  • Avocado

How to make it:

  1. Cut a cucumber in half, then cut lengthwise. You can get 4 pieces out of each half for two small sandwiches.
  2. Slice a tomato into 2 cucumber shaped pieces and put on two cucumber slices.
  3. Cut thin slices of avocado and put on top of the tomato.
  4. Take two pieces of turkey and put on the other two cucumber slices.
  5. Put mustard on the turkey.
  6. Take the turkey side and put it on top of the avocado and tomato side.
  7. Grab a handful of spinach and splash some balsamic vinegar on it.
